Take orange
juice, lemon juice, rum, soy sauce, ginger, bird’s eye chillies, crushed
peppercorns, salt, garlic, fennel seeds and vinegar in a bowl and mix. Add
chicken and mix well. Refrigerate to marinate for 2 hours.
Step 2
Preheat an
electric griller and grease with some oil.
Step 3
Skew
marinated chicken cubes onto the satay sticks and reserve the leftover marinade
for basting.
Step 4
Place the
skewers on preheated griller and grill, rotating the sticks and basting with
the reserved marinade and some oil, till golden from all sides and fully
cooked.
